Assalamualaikum...

I want to share some pictures of my favourite mint trees.

Couple of months ago i plant some mint trees. Its almost died. I soaked it in water for 3 days before it grew some roots. Then i plant it over small plastic case.

Now it grow stronger and i just replace it in the ground. No more plastic case.

perfect chocolate moist cake. just perfect.

Chocolate moist cake. yes. i use to have the perfect CMC. i  got it from my ex roommate back in UiTM. I was on my diploma on that time. after couple of years, i lost the recipe. it was devasted. i couldnt find any CMC that up to the previous recipe standard. feel so sad, im not use to bake CMC as often as before as everytime i bake with different recipe of course, it was not the same.

Until, I met Saeidah. My ex colleague in KTT. She was a good cook. her nasi kerabu is to die dine for. Sampai sekarang saya masih terfikirkan keenakkan nasi kerabu ed. And she also bring back my long lost CMC recipe. Of course, i lost that recipe, last year. again... i was devastated and stop making chocolate cake (but i do some chocolate cuppies.. hehe)

So, Here is her recipe


1 3/4 cups all-purpose flour, plus more for pans
2 cups sugar
3/4 cups good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed hot coffee

pre heat oven at 170c.

Combine all the dry ingredient i a bowl. in other bowl, whisk oil, eggs and buttermilk. add in dry ingredient and whisk until combine. add in vanilla and hot cup of coffee.

put in baking pand and bake for 35-45 mins or until toothpick test passed.  let cool in pans for  30 mins before let it cool in rack n frost it.

the best chocolate frosting in the world by joy the baker. this frosting is seriously good. not that super sweet. just nice and chocolaty and creamy and... you name it. its good.

The Best chocolate buttercream recipe by joy the baker


makes enough to frost 24 cupcakes or one 8-inch layer cake
1 1/2 sticks (3/4 cup) unsalted butter, softened
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
2 1/4 cup powdered sugar, sifted
1 teaspoon pure vanilla extract
2 tablespoons milk
1/2 cup heavy cream  whipping cream (ini saja yang available dalam fridge :p)
1/3 cup Ovaltine  MILO


Pukul butter dan serbuk koko. Its going to be very thick. add in icing sugar, salt and vanilla, keep whisking. bila gula dah sebati dengan adunan, tinggikan kelajuan mixer. ( i use hand whisk for recipe, so, whisk laju-laju sampai lenguh. hehe)

in other bowl, mix together MILO and whip cream, kacau, dan masukkan sesudu demi sesudu dan whisk, sampai anda dapat kepekatan yang diingini, selalunya stak habis pun adunan milo+whip cream tadi.

Siap.

Now you can frost it as you like. this frosting also great on cupcakes. :)

homemade nasi beriani kambing yang super ummph semua orang pun boleh buat. :)

Beriani oh beriani... :) last weekend ayah i ada beli daging kambing, Terus dalam fikiran hendak masak nasi beriani kambing. Masalahnya, my family bab nasi beriani ni selalu makan kat kedai saja. so, i decided to give ourselves a try and hunting some great recipe online. and i do find this 1 blog that came up with nasi beriani kambing pakistan. waaah... teruja langsung kami guna sahaja resipi ini.
resipi ini sangat authentic and not use any ready made beriani powder, semua from scratch tetapi insyaallah semua rempah dah sedia ada di dapur.

Semasa tengah masak tu, Semua warga rumah berulang alik kedapur, tak tahan bau yang sungguh harum dari nasi beriani ini.

Tapi disini saya hendak sediakan tips untuk buat kerja didapur smooth semasa menyediakan resipi ini.

1. perap kambing anda satu jam awal sekurang kurangnya, sambil menunggu kambing perap.
2. Potong dadu bawang-bawang dan letakkan satu pinggan dengan rempah kering yang diperlukan  
    (senang nanti tinggal masuk saja dalam kuali untuk menumis.
3. Potong dadu tomato dan campurkan dengan yogurt.

Setelah selesai tempoh satu jam, bolehla menumis seperti resipi di blog kak azie kitchen ya.

setelah da masukkan air dalam kambing (rujuk resipi) bolehlah rendam nasi basmati dalam air dalam 20 minit, dan toskan, dan bolehlah dimasak, untuk beras basmathi ini, saya beli beras basmathi kosinor dari faiza. kt paket bertulis, super extra long rice. hahaha.. serius panjang beras ini. untuk masak, saya buat, 1 cawan nasi, bersamaan 2 cawan air.

setelah nasi masak, kira-kira daging pun dah agak kering (jangan kering sangat) bolehlah dipindahkan nasi dan kambing secara berlapis di dalam rice cooker.

voila.. senang.

seriously, its so good, and its so easy to make. tak terfikir yang masak nasi beriani could be this easy.

homemade buttermilk


Assalamualaikum...
Buttermilk, must have item for red velvet cake. And personally i love using buttermilk in baking my cakes, cupcakes and pancakes. It makes everything goes moist and fluffy. :)

But its quite expensive and its also hard to find. Di tempatku cuma ada di cold storage. Sometimes not available.

Jadi, why not using homemade buttermilk. Cheaper and the ingredients are already in your fridge.

Ingredients for Buttermilk :

About a cup of milk
1 tablespoon lemon juice / distilled white vinegar.

Pour almost 1 cup of milk in a cup, add lemon juice and add milk until it reach 1 cup. Let stand for couple of minutes and voila! Siap dan sedia diguna. usually saya akan guna distilled white vinegar tetapi dah habis. kali ini guna lemon juice pula.

P/s. Senang kan? Dah cepat buat red velvet. :)

Homemade Hoisin Sauce for chinese food lover

Assalamualaikum...

Siapa suka chinese food, raise up your hand. :) well, i do.. very much and so much i will craving it and begging my hubs to bring me to some local muslim chinese restaurant. sangat suka masakan ayam yang ada cili kering, the soup are so refreshing and the butter prawn, ahhhh.. rasa tak mahu balik. haha..

so, last week i made my attempt to cook my own chinese food and try to impress my family. BUT, many of the dishes need hoisin sauce. try to catch that sauce in a local hypermarket, yang halal tiada. so... i google and find a homemade hoisin sauce recipe. a dinner savior. haha.. its super simple, super easy and all the ingredient are already at your pantry. so.. here it is.. and it make my dream of chinese culinary masterpieace set in a table came true.. of course i chang the ingredient a bit to suits halalness.. :)

4 tablespoons soy sauce (yang cair dan bukan kicap masin atau kicap manis ya.. banyak jenama yang halal)
2 tablespoons peanut butter
1 tablespoon honey
2 teaspoons season rice vinegar apple cider vinegar/lemon juice
1 garlic clove, finely minced
2 teaspoons sesame seed oil
1 teaspoon chinese hot sauce (more or less to taste) chili sauce
1/8 teaspoon black pepper

just combine all ingredient and whisk. easy peasy. and you can reduce all proportion if you want less hoisin sauce. :) 

The delicious general tso chicken. so yummy... recipe next entry ya..




I made few dishes that need hoisin sauce in it and it went great. so, chinese food lover out there, this recipe should be a keeper. :)

saturday that feel like sunday


Assalamualaikum...
Serius hari ini macam hari ahad. Kenapa? Mungkin sebab hari ini i ada kelas solekan... Ada kena mengena kah? Hehe...

Anyway, hari ini di kampung ku ada kelas tatarias. Belajar solek menyolek. Ramai yang hadir, dari yang muda hingga yang dewasa. ( i kategori mana ye? Haha)

Usai melihat demo solekan, semua peserta kena pilih pasangan dan cuba menyolek. My partner in crime was my sister in law, aishah. Dia yang mekap kan i. she really good with all these make up thingy, sebab memang die part time make up artist. Hehe..

Kebetulan penganjur hendak beri hadiah kepada pasangan yang mekap paling outstanding, jadi apa lagi, kami menang lah. Hhehe. Dapat barangan Giffarine. Tadi pun mereka guna produk ini dan its not bad. Make up ringan di muka dan paling pentinh its halal and cheaper than any other brand out there. :)

So, thats what i did today and now im exhausted (cheh,kelas half day je kot... You yang di make up kan kot) and i do feel like today is sunday.

red velvet cake

Assalamualaikum...


Red velvet. just love the cake. basically just a red chocolate cake covered with cream cheese frosting. yes, the red velvety colour that make it so special.and the cream cheese frosting of course. :)

Saya da buat numerous times of red velvet with numerous of recipe. apa yang sama ialah kehadiran vinegar atau cuka dalam kek ini. itu yang membuatkan rasa dan rupanya begitu baldu sekali.


So this is my favourite recipe for red velvet so far. got this recipe from joy the baker. of course i made some tiny adjusment, by using apple cider vinegar instead of white vinegar and usage of red color.

8 Tablespoons unsalted butter, at room temperature
1 1/2 cup sugar
2 egg
5 Tablespoons unsweetened cocoa powder
1 tablespoon red colour.
1 teaspoon vanilla extract
1 cup buttermilk
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons apple cider vinegar



Cream together butter and sugar until creamy, add eggs masukkan vanilla. Dalam mangkuk berasingan campurkan tepung, baking powder, garam dan serbuk coklat. whiskkan atau siftkan semua tepung-tepung ini. INGAT, JANGAN masukkan baking soda dahulu. selepas itu, menggunakan hand whisk atau senduk kayu, masukkan adunan tepung dan buttermilk ke dalam adunan butter tadi secara berselang diakhiri tepung. selepas itu masukkan pewarna. jangan adun tepung keterlaluan. over beating akan menyebabkan kek menjadi keras. reaksi protein dalam tepung. Selepas itu,
campurkan baking soda dan vinegar, dan masukkan ke dalam adunan kek tadi. terus masuk dalam pan dan bakar dalam oven yang sudah panas pada suhu 170c selama 30 minit atau hingga ujian pencungkil gigi lulus. hehe...

Cream Cheese Frosting

4 ounce cream cheese
4 ounce butter
2 cup icing sugar

Mix cream cheese and butter until combine and fluffy, add in sugar 1/2 cup at a time in low speed. guna hand whisk saja, senang. senang nak basuh. hehehe.. selepas itu boleh spread diatas kek. letak dalam fridge dalam 10 minit selepas spread atas kek supaya dia lebih teguh diatas kek.

The easiest way to cut cake to half. buat penanda di keliling cak dan potomg

Smear cream cheese frosting in the middle before topped with half of the cake
walla.. siap.
sebenarnya saya telah buat 2 buah kek dari recipe ini. saya bakar dalam acuan kek yang kecil. so.. my cake was small and cepat habis.yang satu lagi tu ade orang tempah. hehe.. dia nak kek kecil ja.

If you want tao have it as cuppies pon boleh. letak dalam cup linear, boleh dapat 12-15 biji. topped with cream cheese frosting, deco comel-comel. makan. saya personally lebih suka kek ini sebagai cupcake dari kek. :)

kuasa syukur

Assalamualaikum...

Kita tak sempurna dan tak akan sempurna. Tidak akan cukup kaya, tidak akan cukup bahagia. Seringkali, kita rasa kekurangan dan ketidak adaan menguasai kehidupan. Menyebabkan kita bersedih dan berasa diri tidak punya itu ini.

Ini kerana kita lupa bersyukur. Bersyukur pada Allah atas apa sahaja yang ada disamping kita. Mungkin tiada wang berjuta, tidak berbelanja di paris atau milan, tetapi kita cukup sihat, cukup wang untuk makan, minum, bersuka suka bersama keluarga. Punya keluarga yang ada disisi sentiasa.

Sungguhpun kita kurang sihat, makan bercatu dan sendiri sebatang kara. Percayalah, dengan panjatan kesyukuran, kita akan rasa sungguh bahagia dan tenang.

Teruskan usaha mengejar impian sambil hati mengucap dan merasa kesyukuran. Insyaallah... Hati bahagia, cita cita tercapai hendaknya...

honey mustard salad dressing.







Assalamualaikum...
Untuk makan malam hari ini saya telah sediakan my favorite salad dressing with salad leaves. Serius salad ini sangat sedap, saya dapat recipe dari allrecipe. Dalam allrecipe tu ada beribu resipi dan tidak semuanya menepati selera or even kadang kadang, tidak menjadi langsung. So, this recipe memang sedap dan i feel blessed to know and eat this dish. Ok. Ini recipenya.

Honey mustard dressing.
1 cup mayonaise
1/4 cup apple cider vinegar ( may use other vinegar)
1/2 cup honey
1 tblspn mustard
1 tspn parsley
1 tspn chopped onion
1 cup vege oil
salt and pepper



Tuang minyak sedikit demi sedikit secara berterusan sambil whisk (drizzle)


Caranya,
campurkan vinegar, mayonaise, mustard dan whisk until combine, masukkan madu, bwg besar cincang dan daun parsley, kacau lagi hingga sebati.
Selepas itu, masukkan minyak perlahan lahan sambil whisk. Dressing akan memekat sedikit. Selepas habis minyak dituang.tambahkan garam dan lada hitam to taste. Simpa dalam bekas kedap dan simpan dalam peti sehingga mahu digunakan. Tahan hingga 3 hari.
Dressing ini juga sedap untuk di jadikan dressing coleslaw, buah, serta daun salad pelbagai jenis.
Rasanya sweet and tangy. Verrrrryyy good and delicous. Macam nak habiskan satu bowl besar salad tu je rasanya. Hehe...

yogurt pop icecream





Assalamualaikum...
My son keep begging and screaming for icecream. Paksa paksa i bukak freezer for some icecream. Masalahnya tiada icecream. Lagipun, sesekali makan icecream takpe, kalau hari hari? Not good tau...

So, teringin hendak buat icecream sendiri, machine takde, the easiest most healthiest icecream would be, popsicle. Last week i ada buatkan my boy watermelon popsicle. 100% blended melon. Sedap. Today i made yogurt pop icecream pula. Taklah 100% sihat as i buat guna yogurt berperisa. Not good for kids, next time cuba buat guna natural yogurt and fresh real fruits. Anyhoo, this is the recipe.

Cuma, yang i perasan, when you add dairy macam yogurt ni, tekstur jadi lembut dan kalau jus semata-mata, tekstur keras macam aiskrim malaysia tu. :) but both are so very delicous. :)






Yogurt pop.
1/2 cup orange juice
2 table spoon honey
1 yogurt (peach for today)
*any yogurt can be mix with orange juice.

Add everything into bowl and stir well.
Put in a pop case or in my case, i just put on jelly case. Hehee. Put in fridge for 1/2hour, insert the pop holder, then put again in a fridge for at least another 5 hour.

I have a few trees around house that's very important for the family, well.. for my mom and me actually, because we can cook out of it. :) it's kinda edible garden in my backyard. It's my mom that started growing them, just recently i have passion for growing this edible trees.

lemon cupcake

Assalamualaikum...



i love cupcake. i love cake. but sometime, i love baking more than ate it. not that its not good. its just i love baking it. its an addiction.

But, this lemon cake is good. i never tired eating this, its moist, its light and its a bit masam due to its glaze. it is seriously good. The original recipe was a vanilla cupcake by laura vitale, i make a few changes by adding lemon juices and zest, and omitting vanilla.

its work. its good. you going to heart this. big time.






lemon glaze





lemon cake recipe:

¾ cup of Granulated Sugar
½ cup of Vegetable Oil
2 Eggs
juices of half lemon
zest from 1 lemon
1 Tbsp of Baking Powder
1/8 tsp of Salt
1 1/2 cup of Cake Flour
1/3 cup of Whole Milk

sift all dry ingredient together in a bowl. whisk oil, sugar and eggs together, put half of dry ingredient and half of milk, whisk until well combine. add the rest of the milk and dry ingredient. combine. do not over mix. then add lemon zest and lemon juice. whisk again lightly until incorporate.

scoop in cupcake liner, then bake for 15-20 mins in 175c oven.



for lemon glaze:
1/2 cup icing sugars
2 tablesoon lemon juice

(combine all and glaze on cool cuppies)
